Grilled Mediterranean Steak Salad

A vibrant and healthy grilled Mediterranean steak salad featuring tender steak, fresh vegetables, and tangy feta cheese, perfect for a light yet satisfying meal.

  • 1 lb flank steak
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 garlic clove, minced
  • 1 tsp Dijon mustard

Instructions

  1. Preheat grill to medium-high heat.
  2. Rub the flank steak with olive oil, oregano, salt, and pepper.
  3. Grill the steak for 4-5 minutes per side for medium-rare, or until desired doneness.
  4. Remove steak from grill and let rest for 5 minutes before slicing thinly against the grain.
  5. In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, and olives.
  6. In a small bowl, whisk together lemon juice, red wine vinegar, minced garlic, Dijon mustard, and a pinch of salt and pepper to make the dressing.
  7. Toss the salad with the dressing until well coated.
  8. Top the salad with sliced steak and sprinkle with crumbled feta cheese.
  9. Serve immediately and enjoy.

Notes

For extra flavor, marinate the steak in the olive oil, garlic, and oregano mixture for 1-2 hours before grilling.
