Grilled Lemon Herb Chicken Kabobs

These Grilled Lemon Herb Chicken Kabobs are juicy, flavorful skewers marinated in fresh lemon juice and a blend of herbs, perfect for a quick and healthy meal.

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 lemon, sliced into rounds for grilling (optional)
  • Wooden or metal skewers

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, garlic, parsley, thyme, oregano, salt, and pepper to create the marinade.
  2. Add the chicken cubes to the marinade, toss to coat well, and refrigerate for at least 30 minutes, preferably 1-2 hours.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken pieces onto the skewers, alternating with lemon slices if desired.
  6. Place the kabobs on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove kabobs from grill and let rest for 5 minutes before serving.

Notes

For extra flavor, serve with a side of tzatziki or a fresh cucumber salad to complement the herbs and lemon.
