Grilled Garlic Herb Shrimp Cups

  • 1 lb large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil, chopped
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Mini phyllo or wonton cups (about 24 cups)
  • 1 lemon, cut into wedges (for serving)

Instructions

  1. Preheat grill to medium-high heat.
  2. In a bowl, combine olive oil, garlic, parsley, basil, oregano, salt, and pepper.
  3. Add shrimp to the bowl and toss to coat evenly with the garlic herb mixture.
  4. Thread shrimp onto skewers or place directly on grill grates.
  5. Grill shrimp for 2-3 minutes per side until pink and opaque.
  6. Remove shrimp from grill and let cool slightly.
  7. Place one grilled shrimp in each mini phyllo or wonton cup.
  8. Garnish with a small sprinkle of fresh herbs and serve with lemon wedges.

Notes

For extra flavor, brush the phyllo cups lightly with garlic butter before filling, or serve with a zesty dipping sauce like aioli.
