Grilled Chimichurri Steak Bites

These Grilled Chimichurri Steak Bites feature tender, juicy steak pieces grilled to perfection and paired with a zesty, fresh chimichurri sauce, making for a vibrant and flavorful appetizer or snack.

  • 1 lb flank steak, cut into bite-sized pieces
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil, divided
  • 1 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • 1/2 tsp red pepper flakes
  • 1/2 cup extra virgin olive oil
  • 1 tsp dried oregano
  • Juice of 1 lemon

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the steak bites with salt, pepper, and 1 tablespoon of olive oil.
  3. In a bowl, combine parsley, cilantro, garlic, red wine vinegar, red pepper flakes, dried oregano, lemon juice, and the remaining olive oil to make the chimichurri sauce; stir well and set aside.
  4. Thread the steak pieces onto skewers if desired for easier grilling.
  5. Grill the steak bites for 2-3 minutes on each side until medium-rare or desired doneness.
  6. Remove from grill and let rest for 5 minutes.
  7. Serve the steak bites topped generously with chimichurri sauce.

Notes

For an enhanced flavor, marinate the steak bites in half of the chimichurri sauce for 30 minutes before grilling. Serve with crusty bread or over a bed of mixed greens for a complete meal.
