Greek Yogurt Breakfast Bark with Berries

A refreshing and healthy Greek yogurt bark topped with fresh berries, perfect for a quick and nutritious breakfast or snack.

Ingredients

  • 2 cups plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup fresh blueberries
  • 1/4 cup fresh raspberries
  • 2 tablespoons chia seeds (optional)
  • 1/4 cup granola (optional, for topping)

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a bowl, mix Greek yogurt, honey, and vanilla extract until smooth.
  3. Spread the yogurt mixture evenly over the parchment paper to about 1/4-inch thickness.
  4. Sprinkle the fresh berries and chia seeds evenly over the yogurt.
  5. Optionally, sprinkle granola on top for extra crunch.
  6. Place the baking sheet in the freezer and freeze for at least 4 hours or until firm.
  7. Once frozen, break the yogurt bark into pieces and serve immediately or store in an airtight container in the freezer.

Notes

For added texture, try mixing in chopped nuts or shredded coconut before freezing.
