  • 1 teaspoon baking powder

  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Chocolate chips or blueberries for eyes

Instructions

  1. In a blender or food processor, pulse the rolled oats until finely ground.
  2. In a bowl, combine ground oats, flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, egg, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until combined, do not overmix.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  6. Pour batter onto the skillet forming ghost shapes using a spoon or a cookie cutter as a guide.
  7. Cook for 2-3 minutes until bubbles form on the surface, then carefully flip and cook another 2-3 minutes until golden.
  8. Press chocolate chips or blueberries onto the pancakes to create ghost eyes while still warm.
  9. Serve warm with syrup, fruit, or your favorite toppings.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking, and try using maple syrup or whipped cream for a delicious Halloween-themed finish.
