Ingredients

Scale
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 4 oz white chocolate, melted (for mummy wrapping)
  • Edible candy eyes (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tray or line with mini cupcake liners.
  2. In a microwave-safe bowl, melt butter and stir in sugar until combined.
  3. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  4. In a separate bowl, whisk together cocoa powder, flour, salt, and baking powder.
  5. Gradually combine the dry ingredients with the wet mixture until smooth batter forms.
  6. Fill each mini muffin cup about 3/4 full with batter.
  7. Bake for 10-12 minutes or until a toothpick inserted comes out with moist crumbs.
  8. Let brownies cool completely before decorating.
  9. Using a piping bag or small spoon, drizzle melted white chocolate back and forth over each brownie to mimic mummy bandages.
  10. Place two candy eyes on each mummy before the white chocolate sets.
  11. Allow the chocolate to harden, then serve your spooky mummy brownie bites!

Notes

For an extra spooky twist, add a drop of red gel icing as a ‘blood’ accent near the eyes, or serve with a scoop of vanilla ice cream for contrast.
