Fresh Plum Tart (Puff Pastry Free)

This fresh plum tart features a flaky, buttery crust made without puff pastry, topped with juicy ripe plums for a naturally sweet and vibrant dessert perfect for any season.

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 3 tbsp granulated sugar
  • ¼ tsp salt
  • 3-4 tbsp ice water
  • 4-5 ripe plums, sliced
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 1 egg, beaten (for egg wash)
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine flour, sugar, and salt. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  3. Add ice water one tablespoon at a time, mixing until the dough just comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
  4. Roll out the chilled dough on a floured surface into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
  5. Arrange the sliced plums evenly over the dough, leaving a 2-inch border all around.
  6. Drizzle honey and vanilla over the plums and sprinkle with cinnamon.
  7. Fold the edges of the dough inward over the plums, pleating as needed to form a rustic tart.
  8. Brush the crust with beaten egg for a golden finish.
  9. Bake for 35-40 minutes or until crust is golden and plums are bubbly.
  10. Allow tart to cool slightly before dusting with powdered sugar and serving.

Notes

For extra crunch, sprinkle sliced almonds over the plums before folding the crust. Serve warm with a scoop of vanilla ice cream for an indulgent dessert.
