  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 34 ripe nectarines, thinly sliced
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line a tart pan with parchment paper or grease lightly.
  2. In a mixing bowl, combine almond flour, sugar, and salt.
  3. Add melted butter, egg, and vanilla extract to the dry ingredients and mix until a smooth dough forms.
  4. Press the almond crust mixture evenly into the bottom and up the sides of the tart pan.
  5. Bake the crust for 12-15 minutes or until lightly golden. Remove and let cool slightly.
  6. In a bowl, toss nectarine slices with honey, lemon juice, and cinnamon.
  7. Arrange the nectarine slices over the baked crust in a decorative pattern.
  8. Return the tart to the oven and bake for another 15-20 minutes until nectarines are tender and crust is fully set.
  9. Let cool completely before serving. Optionally, chill for 30 minutes for a firmer texture.

Notes

For extra texture, sprinkle sliced almonds on top before the final bake or serve with a dollop of whipped cream or vanilla ice cream.
