  • 1 1/4 cups whole wheat flour
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 3-4 tablespoons ice water
  • 3 cups fresh pitted cherries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional, for sprinkling)

Instructions

  1. In a mixing bowl, combine the whole wheat flour, salt, and sugar.
  2. Cut in the cold butter cubes using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together.
  4. Form the dough into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. In a bowl, toss cherries with sugar, cornstarch, lemon juice, and vanilla; set aside.
  7. On a floured surface, roll out the chilled dough into a 12-inch circle.
  8. Transfer the dough onto a parchment-lined baking sheet.
  9. Arrange the cherry mixture in the center of the dough, leaving a 2-inch border around the edges.
  10. Fold the edges of the dough over the cherries, pleating as needed to form a rustic crust.
  11. Brush the crust with beaten egg and sprinkle with coarse sugar, if using.
  12. Bake for 40-45 minutes, until crust is golden and cherries are bubbly.
  13. Allow to cool slightly before serving.
