Fresh Apricot Galette (Honey Glaze)

This Fresh Apricot Galette features a flaky, buttery crust filled with ripe apricots and finished with a delicate honey glaze, perfect for a summer dessert.

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 8 tablespoons cold unsalted butter, cut into small cubes
  • 3 to 4 tablespoons ice water
  • 4 to 5 fresh apricots, pitted and sliced
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • 1 egg, beaten (for egg wash)
  • Turbinado sugar for sprinkling (optional)

Instructions

  1. In a large bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  2. Add ice water one tablespoon at a time and mix until the dough just comes together. Shape into a disk, wrap in plastic, and refrigerate for at least 1 hour.
  3. Preheat oven to 375°F (190°C). Roll out the chilled dough on a floured surface into a 12-inch circle.
  4. Transfer dough to a parchment-lined baking sheet. Arrange apricot slices in the center of the dough, leaving a 2-inch border.
  5. Drizzle apricots with lemon juice, vanilla extract, and sprinkle with granulated sugar.
  6. Fold the edges of the dough up over the apricots, pleating as needed.
  7. Brush crust with beaten egg and sprinkle with turbinado sugar if desired.
  8. Bake for 35-40 minutes or until crust is golden and apricots are tender.
  9. While warm, brush the apricots and crust with honey glaze for shine and sweetness.
  10. Let cool slightly before serving. Enjoy!

For added texture, serve with a scoop of vanilla ice cream or a dollop of whipped cream.
