Falafel Pita Wrap

A delicious Middle Eastern falafel pita wrap combining crispy chickpea patties with fresh vegetables and creamy tahini sauce for a satisfying, flavorful meal.

Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1 small onion, roughly chopped
  • 2 cloves garlic
  • 1/4 cup fresh parsley leaves
  • 1/4 cup fresh cilantro leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  • 4 pita breads
  • 1 cup chopped tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup cucumber, diced
  • 1/4 cup tahini sauce

Instructions

  1. Drain chickpeas and pulse in a food processor with onion, garlic, parsley, and cilantro until coarsely ground.
  2. Add cumin, coriander, baking powder, salt, and pepper; pulse to combine without pureeing.
  3. Form mixture into small balls or patties.
  4. Heat vegetable oil in a deep pan over medium heat; fry falafel in batches until golden and crispy, about 3-4 minutes per side.
  5. Drain on paper towels.
  6. Warm pita breads and spread with tahini sauce.
  7. Fill each pita with falafel, tomatoes, lettuce, and cucumber.
  8. Wrap tightly and serve immediately.

Notes

For extra flavor, add pickled turnips or a squeeze of fresh lemon juice to your falafel pita wrap.
