Potato Salad

A classic potato salad combining tender potatoes with a creamy, tangy dressing perfect for picnics and barbecues.

  • 2 pounds potatoes, peeled and diced
  • 3 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon apple cider vinegar
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Place diced potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 10-15 minutes. Drain and let cool.
  2. In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Mix well.
  3. Add cooled potatoes, chopped eggs, celery, red onion, and parsley to the dressing. Gently fold to combine.
  4. Chill the potato salad in the refrigerator for at least 1 hour before serving to allow flavors to meld.
  5. Adjust seasoning if necessary before serving.

Notes

For extra flavor, try adding a teaspoon of pickle relish or a sprinkle of smoked paprika on top before serving.
