1 cup dark chocolate chips (70% cacao or higher)
1/2 cup freeze-dried raspberries, crushed
1/2 cup vanilla protein powder
1/4 cup almond butter
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
Pinch of sea salt
Cocoa powder for dusting (optional)
Instructions
Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
In a mixing bowl, combine protein powder, crushed freeze-dried raspberries, almond butter, honey, vanilla extract, and sea salt.
Pour the melted chocolate into the dry mixture and stir until fully combined.
Chill the mixture in the refrigerator for 20-30 minutes until firm enough to shape.
Scoop small portions and roll them into 1-inch balls using your hands.
Optional: Roll each truffle in cocoa powder for a finishing touch.
Place the truffles on a parchment-lined tray and refrigerate for at least 1 hour before serving.
Notes
For extra crunch, add finely chopped nuts or seeds to the mixture before chilling.
