  • 2 racks of beef ribs (about 4 pounds)
  • 2 tablespoons olive oil
  • 1 cup BBQ sauce
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 2 teaspoons salt
  • 1 tablespoon brown sugar
  • 1/2 cup apple cider vinegar
  • Wood chips for smoking (hickory or mesquite)

Instructions

  1. Preheat your grill or smoker to 250°F (120°C) and prepare wood chips for smoking.
  2. In a bowl, mix smoked paprika, garlic powder, onion powder, cayenne pepper, black pepper, salt, and brown sugar to create a dry rub.
  3. Pat the beef ribs dry and rub the olive oil evenly over them.
  4. Generously apply the dry rub mixture all over the ribs, pressing it into the meat.
  5. Place the ribs on the grill or smoker bone side down, close the lid, and smoke for 3 hours, maintaining temperature.
  6. After 3 hours, brush the ribs with BBQ sauce and continue to cook for another 1 hour.
  7. Mix apple cider vinegar with remaining BBQ sauce and baste the ribs every 15 minutes during the last hour.
  8. Remove the ribs from the grill and let them rest for 10 minutes before slicing.
  9. Arrange ribs on a platter with bones visible for a creepy skeleton appearance and serve warm.

Notes

For extra spooky presentation, garnish with fresh herbs and use a Halloween-themed platter. You can also serve with spicy coleslaw to balance smoky flavors.
