Chicken Thigh Marinade

A flavorful and easy chicken thigh marinade that tenderizes meat while infusing it with a perfect balance of savory and tangy notes, ideal for grilling or baking.

  • 4 boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano

Instructions

  1. In a medium bowl, whisk together olive oil, soy sauce, lemon juice, minced garlic, honey, smoked paprika, black pepper, salt, and dried oregano.
  2. Place the chicken thighs in a resealable plastic bag or shallow dish.
  3. Pour the marinade over the chicken, ensuring all pieces are evenly coated.
  4. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
  5. Remove chicken from the marinade and discard the excess marinade.
  6. Cook the chicken thighs by grilling over medium heat for 6-7 minutes per side, or bake at 400°F (200°C) for 25-30 minutes until fully cooked and internal temperature reaches 165°F (74°C).
  7. Let rest for 5 minutes before serving.

Notes

For extra flavor, add a pinch of red pepper flakes to the marinade or serve the chicken with a fresh herb garnish like chopped cilantro or parsley.
