  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo wing sauce
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese

  • 2 green onions, sliced
  • Salt and pepper, to taste
  • Cooking spray or olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis in half lengthwise and scoop out the seeds and flesh to create boats.
  3. Lightly season zucchini boats with salt and pepper and place them on a baking sheet coated with cooking spray or olive oil.
  4. Bake the zucchini halves for about 10 minutes until slightly tender.
  5. In a bowl, mix shredded chicken with buffalo wing sauce and softened cream cheese until well combined.
  6. Spoon the buffalo chicken mixture evenly into each zucchini boat.
