Blueberry Protein Muffin Cookies

These Blueberry Protein Muffin Cookies combine the fluffy texture of muffins with the convenience of cookies, packed with protein and fresh blueberries for a healthy, delicious snack.

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 large egg
  • 1/4 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together oat flour, protein powder, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat the egg, then mix in Greek yogurt, honey, melted coconut oil, and vanilla extract until smooth.
  4. Combine wet ingredients with dry ingredients and stir until just combined.
  5. Gently fold in the fresh blueberries, being careful not to crush them.
  6. Drop spoonfuls of batter onto the prepared baking sheet, flattening slightly to form cookie shapes.
  7. Bake for 12-15 minutes, or until edges are golden and a toothpick comes out clean.
  8. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, sprinkle a pinch of coarse sugar on top before baking or try adding chopped nuts for crunch.
