Blueberry Muffin Protein Cookies

Deliciously soft and packed with protein, these Blueberry Muffin Protein Cookies offer a healthy twist on a classic treat, perfect for a nutritious snack or post-workout boost.

  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the rolled oats, protein powder, almond flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the honey (or maple syrup), applesauce, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries, taking care not to break them up too much.
  6. Drop tablespoon-sized scoops of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For added crunch, sprinkle some chopped walnuts or almonds on top before baking, or substitute fresh blueberries with dried ones for a different texture.
