Blueberry Cobbler

A classic Blueberry Cobbler featuring juicy blueberries baked under a sweet, golden biscuit crust, perfect for a comforting dessert any time of year.

  • 4 cups fresh or frozen blueberries
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 cup granulated sugar (for topping)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix blueberries with 3/4 cup sugar, lemon juice, lemon zest, and cinnamon. Set aside.
  3. In another bowl, whisk together flour, 1 cup sugar, baking powder, and salt.
  4. Stir in melted butter, milk, and vanilla extract until just combined to form the batter.
  5. Pour the blueberry mixture into a greased 8×8-inch baking dish.
  6. Drop spoonfuls of batter evenly over the blueberry filling to cover most of the fruit.
  7. Bake for 40–45 minutes or until the topping is golden brown and the blueberries are bubbling.
  8. Allow to cool slightly before serving warm, optionally with vanilla ice cream or whipped cream.

Notes

For extra flavor, sprinkle a little coarse sugar on top of the batter before baking for a crunchy crust.
