Beef Meatball Subs (Low Calorie/Lean)

  • 1 lb lean ground beef (95% lean)
  • 1/4 cup whole wheat breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups marinara sauce (low sugar)
  • 4 whole wheat sub rolls (6-inch)
  • 1/2 cup shredded part-skim mozzarella cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine lean ground beef, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, and pepper. Mix thoroughly but gently.
  3. Shape mixture into 16 small meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake meatballs in the preheated oven for 15 minutes or until cooked through.
  5. While meatballs bake, warm the marinara sauce in a saucepan over medium heat.
  6. Once baked, transfer meatballs to the saucepan with marinara and simmer gently for 5 minutes.
  7. Slice the whole wheat sub rolls lengthwise, without cutting all the way through.
  8. Spoon meatballs and sauce evenly into each sub roll, then sprinkle with shredded mozzarella cheese.
  9. Place subs on a baking sheet and broil for 2-3 minutes or until cheese is melted and bubbly.
  10. Garnish with fresh basil leaves if desired and serve warm.

Notes

For extra flavor, add sliced banana peppers or a sprinkle of crushed red pepper flakes before serving.
