1 lb beef sirloin, cut into 1-inch cubes
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 medium zucchini, sliced into 1/2-inch rounds
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
Salt and freshly ground black pepper, to taste
Wooden or metal skewers
Instructions
Soak wooden skewers in water for 30 minutes if using to prevent burning.
In a bowl, combine olive oil, minced garlic, oregano, paprika, salt, and pepper. Add beef cubes and toss to coat. Marinate for at least 30 minutes in the refrigerator.
Preheat grill to medium-high heat.
Thread beef, bell peppers, and zucchini alternately onto skewers.
Grill kabobs for 10–12 minutes, turning occasionally, until beef is cooked to desired doneness and vegetables are tender.
Remove from grill and let rest for a few minutes before serving.
Notes
For extra flavor, serve kabobs with a side of tzatziki sauce or a squeeze of fresh lemon juice.
