  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup plain Greek yogurt
  • 1/4 cup unsweetened almond milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a donut pan.
  2. In a large bowl, whisk together oat flour, protein powder, coconut sugar, baking powder, baking soda, and salt.
  3. In another bowl, blend Greek yogurt, almond milk, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Gently fold in fresh raspberries, being careful not to crush them.
  6. Divide the batter evenly into the donut pan, filling each mold about 3/4 full.
  7. Bake for 15–18 minutes, or until a toothpick inserted comes out clean.
  8. Allow donuts to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before serving.

Notes

For an extra touch, drizzle the cooled donuts with a light vanilla glaze or sprinkle with powdered sugar.
