Ingredients

Scale
  • 1 lb chicken tenders
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 2 tbsp olive oil (optional, for brushing)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a lightly greased wire rack.
  2. In a shallow bowl, whisk the eggs until smooth.
  3. In another bowl, combine the Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, salt, and black pepper.
  4. Dip each chicken tender into the eggs, then coat thoroughly in the Parmesan breadcrumb mixture, pressing gently to adhere.
  5. Place the coated tenders on the prepared baking sheet or rack. For extra crispiness, lightly brush or spray olive oil over the tenders.
  6. Bake in the preheated oven for 15-20 minutes, turning halfway through, until the chicken is cooked through and the crust is golden brown.
  7. Remove from oven and let rest for 2-3 minutes before serving.

Notes

For an extra kick, serve with a side of marinara sauce or your favorite dipping sauce. You can also swap panko for gluten-free breadcrumbs if needed.
