Baked Cod with Fresh Peach Salsa

This light and flavorful baked cod is paired with a refreshing fresh peach salsa, creating a perfect balance of savory and sweet for a healthy and vibrant meal.

  • 4 cod fillets (about 6 oz each)
  • 2 ripe peaches, diced
  • 1 small red bell pepper, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil, divided
  • Salt and pepper to taste
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a medium bowl, combine diced peaches, red bell pepper, red onion, jalapeño, cilantro, and lime juice. Stir gently to mix and set aside.
  3. Pat the cod fillets dry and place them on the prepared baking sheet.
  4. Drizzle 1 tablespoon olive oil over the fillets, then season with salt, pepper, paprika, and garlic powder.
  5. Bake the cod in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  6. Remove the cod from the oven and drizzle the remaining tablespoon of olive oil over the fresh peach salsa.
  7. Serve the baked cod topped with the fresh peach salsa immediately.

Notes

For extra zest, serve with a side of cilantro-lime rice or a mixed green salad. You can swap peaches with nectarines in season.
