  • 2 cups unsweetened almond milk (or milk of choice)
  • 1 large egg
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled, cored, and chopped
  • ¼ cup chopped walnuts (optional)
  • 2 tablespoons ground flaxseed
  • ¼ cup raisins or chopped dates (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
  2. In a large bowl, combine the oats, baking powder, cinnamon, salt, ground flaxseed, and walnuts if using.
  3. In another bowl, whisk together the almond milk, egg, maple syrup, and vanilla extract until well blended.
  4. Add the wet ingredients to the dry ingredients and stir until combined.
  5. Fold in the chopped apple and raisins or dates if using.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 35 to 40 minutes, or until the oatmeal is set and the top is golden brown.
  8. Remove from oven and let cool slightly before serving.

Notes

For extra creaminess, serve warm with a splash of milk or a dollop of Greek yogurt on top.
