Air Fryer Stuffed Zucchini Boats

These Air Fryer Stuffed Zucchini Boats are a delicious and healthy low-carb meal, filled with savory ground meat, cheese, and herbs, perfect for a quick weeknight dinner.

  • 2 medium zucchinis
  • 1/2 lb ground turkey or beef
  • 1/4 cup diced onion
  • 1 garlic clove, minced
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Slice zucchinis in half lengthwise and scoop out the seeds to create boats.
  3. Heat olive oil in a skillet over medium heat. Add diced onion and garlic, sauté until fragrant.
  4. Add ground turkey or beef, cook until browned. Season with salt, pepper, and Italian seasoning.
  5. Stir in marinara sauce and cook for 2-3 more minutes. Remove from heat.
  6. Fill each zucchini boat with the meat mixture.
  7. Top with shredded mozzarella and Parmesan cheese.
  8. Place zucchini boats in the air fryer basket and cook for 10-12 minutes or until zucchinis are tender and cheese is melted and bubbly.
  9. Garnish with fresh parsley before serving.

Notes

For a vegetarian version, replace meat with sautéed mushrooms and lentils. Serve with a side salad or garlic bread for a complete meal.
