Air Fryer Fajita Vegetables with Steak

A quick and flavorful dish featuring tender steak paired with perfectly air-fried fajita vegetables, delivering a healthy and satisfying Mexican-inspired meal.

  • 1 lb flank steak, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 1 lime, juiced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, combine the sliced steak with half of the olive oil, chili powder, paprika, cumin, garlic powder, salt, and pepper. Toss to coat evenly.
  3. In another bowl, toss the sliced bell peppers and onion with the remaining olive oil, salt, and pepper.
  4. Place the steak in a single layer in the air fryer basket and cook for 5 minutes.
  5. Add the vegetables on top of the steak and continue cooking for an additional 7-8 minutes, shaking the basket halfway through for even cooking, until the steak is cooked to desired doneness and vegetables are tender.
  6. Remove from air fryer, squeeze lime juice over the mixture, and garnish with fresh cilantro.
  7. Serve immediately with warm tortillas or your favorite side.

Notes

For extra flavor, marinate the steak for 30 minutes before cooking and serve with guacamole or sour cream on the side.
