Air Fryer Buffalo Cauliflower & Chicken Tacos

These Air Fryer Buffalo Cauliflower Chicken Tacos combine crispy, spicy buffalo-flavored cauliflower and tender chicken for a flavorful, healthy twist on classic tacos.

  • 1 small head cauliflower, cut into florets
  • 2 chicken breasts, diced
  • 1/2 cup buffalo sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas
  • 1/2 cup shredded lettuce
  • 1/4 cup diced red onion
  • 1/4 cup crumbled blue cheese (optional)
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, toss cauliflower florets with 1 tablespoon olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. In a separate bowl, toss diced chicken with the remaining olive oil and a pinch of salt and pepper.
  4. Place cauliflower in the air fryer basket and cook for 10 minutes, shaking halfway through.
  5. Add the chicken to the air fryer with the cauliflower and cook for an additional 8-10 minutes until chicken is cooked through and cauliflower is crispy.
  6. Transfer cauliflower and chicken to a bowl and toss with buffalo sauce until well coated.
  7. Warm tortillas in the air fryer for 1-2 minutes or on a skillet.
  8. Assemble tacos by dividing buffalo cauliflower and chicken among tortillas, then topping with shredded lettuce, diced red onion, blue cheese if using, and fresh cilantro.
  9. Serve with lime wedges for squeezing over the tacos.

Notes

For extra crunch, add a drizzle of ranch or a sprinkle of crushed tortilla chips before serving.
