20-Minute Beef Stroganoff (Lean Beef)

This quick and creamy 20-Minute Beef Stroganoff features lean beef strips simmered in a savory mushroom sauce, perfect for a nutritious weeknight dinner.

  • 1 lb lean beef sirloin, thinly sliced
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 cup plain Greek yogurt
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 8 oz egg noodles, cooked according to package instructions

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sliced beef, season with salt and pepper, and cook until browned, about 3-4 minutes. Remove beef and set aside.
  2. In the same skillet, add chopped onion and garlic, sauté until softened, about 2 minutes.
  3. Add sliced mushrooms and cook until tender, about 4-5 minutes.
  4. Pour in beef broth, Worcestershire sauce, and Dijon mustard; stir to combine and bring to a simmer.
  5. Return browned beef to the skillet and simmer for another 3 minutes to meld flavors.
  6. Remove skillet from heat and stir in Greek yogurt until the sauce is creamy. Adjust seasoning with salt and pepper as needed.
  7. Serve the stroganoff over cooked egg noodles and garnish with fresh parsley.

Notes

For a lighter option, substitute Greek yogurt with low-fat sour cream. Serve with steamed green beans or a side salad for a complete meal.
