15-Minute Sesame Ginger Chicken Stir Fry

A quick and flavorful sesame ginger chicken stir fry loaded with fresh vegetables, perfect for a healthy weeknight dinner in just 15 minutes.

Ingredients

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 green onions, sliced
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp toasted sesame seeds
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add the sliced chicken and cook until browned and cooked through, about 5-6 minutes. Remove from skillet and set aside.
  3. In the same skillet, add garlic and ginger; sauté for about 30 seconds until fragrant.
  4. Add the bell pepper, broccoli, and snap peas; stir fry for 3-4 minutes until vegetables are tender-crisp.
  5. Return the chicken to the skillet.
  6. In a small bowl, whisk together soy sauce, rice vinegar, honey, and red pepper flakes (if using).
  7. Pour the sauce over the chicken and vegetables, tossing to combine and heat through for 1-2 minutes.
  8. Remove from heat and garnish with sliced green onions and toasted sesame seeds.
  9. Serve hot over steamed rice or noodles.

Notes

For extra crunch, add chopped cashews or peanuts just before serving. Serve with jasmine rice or rice noodles for a complete meal.
